I want to preface this recipe by saying - don't get scared by the ingredient list! People often get inundated by a long recipe because they think it will be hard or time consuming. This recipe took about 30 minutes for me to make, including washing the processor in between uses. There are quite a few vitamins and minerals that are shown to be profoundly helpful to PCOS sufferers. Don't be intimidated by this list! Most of these things can be found in a really good multi-vitamin. Also, I would like to point out that there is a strong link between gluten intolerance and mineral deficiencies. PCOS effects 5-10% of women of reproductive age and is thought to be the leading cause of female infertility.
